Whole Wheat Oatmeal Chocolate Chip Pancakes

There are few things better than a lazy Sunday. Add pancakes to the lazy Sunday and I’m sold. I made these a couple of weeks ago after a long morning of soccer practice when I came back to my apartment and my stomach was grumbling. The recipe is simple and can be made in less than 20 minutes so you can go from hungry to happy in a snap.

Note: I decided that this recipe needed just a bit more decadence so I slathered some Nutella on the top to make it extra delicious…I highly suggest you do the same! I mean, they’re so healthy with the whole wheat so why not…

  • 1 Cup Whole Wheat Flour (you can use regular white flour if that’s all you have on hand!)
  • 1/2 Cup Quick Cooking Oats
  • 1/4 Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 1 Egg
  • 1 Cup Milk
  • 2 Tablespoons Brown Sugar
  • 1/4 Cup Plain Greek Yogurt
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup Chocolate Chips (I used semi-sweet!)

The How-To:

Mix the flour, oats, baking powder, and cinnamon together in a large bowl. Whisk the eggs with the milk and vanilla and combine with the dry ingredients. Next, mix in the sugar and yogurt until there are no lumps. Be gentle when mixing because if you over mix the pancakes will be dense and not light and fluffy!

Heat a skillet over medium heat and drop about 1/4 cup of batter onto the greased skillet (about a 4 inch diameter). Cook until the edges are beginning to brown and bubbles start to form. Basically, cook each side for about 1-2 minutes each. This recipe makes about 6 pancakes. So invite over some friends and have a little pancake party!

You could easily substiture the chocoalte chips with other goodies like fruit, nuts, or peanut butter. Top with some real maple syrup, bam! Enjoy!

I posted about Karen Walker a couple months ago and how I am utterly obsessed with her shades. I find that every single one of my favorite bloggers own a pair of her sunglasses and I am happy to announce that I have joined the “Bloggers with Karen Walkers Sunglasses Club”…I should probably come up with a new name for that, huh? I bought them before my trip to Hawaii and wore them while relaxing at the beach! Coming back to Austin, I rotate them in the cycle of all my sunglasses that I wear to class. There’s this wall in my apartment that desperately needs to be decorated but my roommates and I have been too busy to get around to it. It’s the wall right behind our TV and every time I turn on Food Network or E! News, I think to myself, I need to get a print to hang up there but then just never do anything…

Until now. I live with 3 other girls and we’ve found the perfect prints to hang up there! Scrolling through Pinterest late at night, I lucked upon Evelyn Hanson. She designs the absolute cutest prints of everything from maps to girlie girl sayings to fashionable clothes. I could easily buy every print but that would be absurd, wouldn’t it? Maybe?

Each one of my roommates and I are going to buy a print that represents our distinct personalities and hang them up on our little wall space that needs some happiness on it. I’ll,of course, go with something girlie and fashionable. #youknowit
