Happy 1st Birthday!

It’s the brinks’ first birthday! If official, I’ve been blogging for a year now! I can’t believe it…where has the time gone?

In honor of this momentous occasion, I decided to throw my bloggie blog a little birthday party. And what better way to celebrate than with cupcakes? More like cupcakes topped with cookie dough frosting? Yes, you read that right. Cookie. Dough. Frosting. Holllllla!

 Here’s the recipe…

Cupcakes:

1 1/2 cups Flour
1 1/4 teaspoons Baking Powder
1/4 teaspoon Salt
1 stick Unsalted Butter, softened
1 cup Sugar
2 Eggs, at room temperature
2 teaspoons Vanilla Extract
2/3 cup Milk

Cookie Dough Frosting:

1/2 cup Unsalted Butter, at room temperature
3/4 cup Brown Sugar
1 tsp Vanilla Extract
1 and 1/4 cupsFlour
1/2 teaspoon Salt
1/4 cup Milk
1 cup Mini Chocolate Chips

For the cupcakes, preheat the oven to 350 degrees and line your baking pan with cupcake liners. This recipe makes 40 mini cupcakes (or about 24 regular sized cupcakes). Beat the butter and sugar in the mixer until light and fluffy (about 2 minutes). Add the eggs and mix. Then, once the eggs are combined, add the milk. In a separate bowl, combine the dry ingredients and add to the wet gradually, while trying not to make too much of a mess. At this point, stick your spoon in the batter and take a lick…it’s goooood. Fill each cupcake liner three quarters of the way full and bake! The mini cupcakes will take 10-13 minutes to bake while the regular sized cupcakes will take 20-23 minutes.Once done, take out and allow to cool. Now, onto the icing!

While the cupcakes are cooling, make the delicious frosting. Cream together the butter and sugar for about 1 minute. Next, add the vanilla and milk. (Remember, this frosting has no eggs so it is completely safe to eat!) After the milk and vanilla are combined, add the flour and salt. Finally, toss in the mini chocolate chips and mix until everything is incorporated! This icing is decadent and yummy and delicious and finger licking good, shall I go on?

Frost the cupcakes once completely cooled and serve to all your friends…or just eat them yourself. Or you can make them for a party like me! Your choice!
