Fun fact about me: I’m always watching The Food Network. I could watch cooking shows ALL. DAY. LONG. Barefoot Contessa, Pioneer Woman, and Giada at Home are three of my favorites, among many others. I love seeing what they make, how they make it, the beauty of their food, how they present it, the list could go on and on and on. I find it so calming.

Since being home from college, I’ve gotten in many hours of watching my shows and have found 4 recipes that I, Brinkles Sprinkles, want to make in the future. Here they are:

Key Lime Pie

I want to make the perfect, tart, rich, and thick key lime pie to remind me of my trip to Seaside a couple of summer’s ago with my friends. We had this key-limey pie every night for dessert.

My favorite treat that reminds me of Paris. I have yet to find a great place to get these in Dallas or Austin so it looks like I’ll just have to satisfy my own sweet tooth!

Silver Lining: Roman Holiday Edition

If everything went according to plans, I would currently be on a plane to Rome right now. It would’ve just been about time for me to pop in my headphones, adjust my neck pillow, and go straight to sleep for the duration of the flight. And then on Saturday morning, I would have awoken to beautiful Italy.

But no. I’m currently back at home bundled in too many fuzzy blankets to count (Thanks, Dad!) deciding whether or not to take a nap or watch Netflix. (How about both?) For one thing, I am not on a plane jet setting across the Atlantic Ocean. Sadly, that just wasn’t happening for me today.

It all started at 5 o’clock this morning. I received one of those creepy automated calls (mind you, extra creepy at 5 in the morning) from American Airlines saying that my flight to Chicago (connecting flight to Rome) had been cancelled. *Initiate panic mode now* Well, of course I proceed to call American Airlines and of course they’re busy at 5 in the morning (my luck) so I get put on hold. Patience Brinkley, patience. Finally, someone calls me back and basically, he initially says that everything is overbooked, there’s no seats, we’re out of luck. You get the picture. Well, I call again, one person will not stop me. Finally, the American Airlines advisor puts me and Emily (we we’re traveling together) on a flight that goes through Philly then to Rome. Woohoo, point for the good team.

No, on the way to the airport, our flight is again cancelled. Point for the bad team. Long story short, we go through the same thing (they secure a flight, they print our boarding passes, we go to gate, they cancel flight) about 5 more times. Well, I eventually get another one of those creepy calls saying that we have been bumped to a flight Saturday morning which will fly through Chicago then Rome and we’ll arrive in Roma Sunday morning. A whole day later, sad day. But hey, there’s absolutely nothing that we can do…

So Emily and I found the silver lining.

1. We woke up this morning at 5 o’clock. We’re tired. And instead of traveling all day long exhausted, we get to go get a good nights sleep in our own beds and will be ready for tomorrow. It’ll be a long day but at least we’ll be well rested!

2. We’re arriving a whole day late but that just means when we finally do arrive in Rome, it’ll be even more exciting and exhilarating.

3. Emily and I have both agreed that after the hellacious day we had at the airport, we deserve an extra helping of gelato for our first meal in Roma, baby.

4. While it might not have been an ideal situation, I got to spend the day with my best friend, Emily.

5. I realized that there’s absolutely nothing either of us can do to get us on a plane to Rome today so why not enjoy another beautifully sunny day in Dallas?

We have a flight scheduled for tomorrow morning. Praying that everything goes as planned tomorrow…I have a lunch with Pope Francis that I would feel so bad missing!

Real Life: Laundry and Packing

Ask any of my friends and they’ll tell you I’m completely organized and always on top of things. I love making lists and always make sure my planner is color coordinated and up-to-date. I love doing things ahead of time and planning out my days. And I for sure don’t like doing things last minute. However, there are 2 exceptions: (1) laundry and (2) packing. Ugh.

Laundry

I do laundry routinely (…don’t let it cross you mind that I ever wear dirty clothes, absolutely not….) but even worse than actually doing the laundry is putting up the laundry. For some reason, I’m just not a fan. Folding clothes, hanging them on coat hangers, arranging them in my closet. No thank you. I wait until the very last minute that I realize I need something that I cleaned to find it and simultaneously put all my other things up before running out of the door to go somewhere, do something, see someone. If I have five minutes before having to leave my apartment, you’ll see me scrambling to put everything up…makes the miserable laundry time go by quicker. Try it, I promise. And then there’s the ironing to make sure I look crisp, I don’t want to talk about it. A necessary evil I tell you.

Packing LV Suitcases

The other think I hate to do: pack. Oh my gosh, I am notorious for overpacking. I wait until the night before to pack for any vacation, no matter what. I would take my whole closet with me on vacation if I could. Choosing what and what not to take is so hard for me. I have to think about where I’m going, what I’ll be doing, if it will look good in pictures. And then the shoes…I mean, don’t get me started, how can a girl chose? So many decisions. It takes a lot of clothes, shoes, and accessories to stay fabulous. Oy vey. 

The reason I tell you this is because this Friday I’m going to Europe. And I can’t tell you the number of times I’ve been asked by friends and family, “Oh! Have you started packing yet?” The answer is no, everyone. And then they look at me as though I’m crazy for waiting until the last minute. My response to them…you’re the crazy one! Ha, take that.

Well, until Thursday night, my suitcase will lie empty and happy…just the way I like it. xx.

Wishing for Wedges

Wedges scream summer. And considering it’s officially summer here in Texas (the temperatures are slowly but surely getting higher and higher…hello sunscreen!), wedges are one of my go to summer shoes for a sassy night out on the town! Say goodbye to uncomfortable winter and spring heels, go get yourself a pedicure, and flaunt some new summer sandals! Here are some that I’ve had my eye on lately:

One of the best things about the wedges above is that most of them come in a variety of colors, go check them all out! I’m sure there’s one just crying out your name…I know for sure that all of those above seem to be screaming “Brinkleyyyyy, try me onnnnn.” Shoes just seem to speak to me.

Mommy, Today is All About YOU

Happy Mother’s Day to all you beautiful mommy’s out there! My mom is essentially my twin with blonde hair. We have the same mannerisms and if we answer a phone call, have fun telling who is who…we talk the same as well! Together we’re also professional power shoppers, baking buddies, speed walkers, and we both love a good TV show (Scandal…Olivia Pope groupies…#noshame). You’re my best friend and while it’s cliché, life wouldn’t be as fun, sweet, crazy, or awesome without you! I love you so much, Mom! I hope you feel extra special today!

Soccer Smartie Pants, Round 2

Its awards season at The University of Texas at Austin. A couple of weeks ago, you read about this athletic banquet put on by the Texas Athletic Department and how all of my soccer teammates and I got all dressed up and ready for the dinner and awards ceremony for the entire athletic department. Well, we had another awards ceremony. However, this time, it was only for the girls! No boys allowed (…sadly, ha!). This “Longhorn Honors Womens Awards Ceremony” recognizes all the wonderful seniors graduating and reflects upon every women’s team and their accomplishments. Blah, blah, blah you get the picture. Hook ’em Horns, yea! But the funny thing about this awards ceremony is that every year is is broadcast on Longhorn Network, a sports television network focusing solely on the Texas Longhorns. My parents were watching and they said I made a 1-second cameo while one of the multiple cameras scanned the audience…so basically I’m famous.

Like I’ve said before, sometimes I don’t recognize my teammates when we’re all dressed up…I’m used to seeing everyone with no makeup on and sweaty from workout! We clean up quite nicely if I do say so myself!

I (Heart) You, American Heart Association

I had the lovely pleasure of interning for the American Heart Association in Austin this semester. It was such a fun experience! Essentially, spring is the American Heart Association’s “Social Season” and the other marketing intern and I were in charge of planning events to help raise money and awareness for AHA over the course of the semester! This past weekend, all of our hard work came into fruition on Saturday night at the 17th Annual Heart Ball, our biggest event of the season! The Heart Ball included 3 silent auctions (silent, super silent, and live), approximately 600 guests, and Lyle Lovett as the featured musical guest! And of course it was black tie attire…ball gowns and tuxedos, ladies and gentlemen, my favorite. While I was constantly working and running around making sure everything was running smoothly, I did manage to take a couple of pics with my iPhone (…so while they might not be the best quality, you get the picture! #punny). If you ever get the chance to attend a Heart Ball anywhere around the country, go! It’s a magical experience!

Sunshine and Summertime

Summer is officially here for me (sadly, not yet for my roommates…I’m over in the corner doing a happy dance while they’re stuck studying for finals. Poor friends!). But hey, I could not be more excited! I have so many fun things planned for this summer that I can’t wait to share with y’all!

Here’s a little preview of things to come: a little later this month I’ll be going to Europe for a bit, then back to Austin to be a soccer camp counselor, then off to Virginia to visit my Nanny and Babop, then back to Austin again for more soccer camps, then in August Texas Soccer is going to Hawaii for a tournament. So much fun ahead! And in between all that, I’ll be living off of sno-cones and watermelon, the ultimate summer snacks. (Am I right or am I right?)

Ahhh finals need to be over so they can join in on my happy dance! Good luck to everyone taking them. You’re going to rock it!
