Three ingredients. That’s all it takes to make these clusters: chocolate, almonds, and mini marshmallows. BAM.
Okay, pour an entire bag of semi-sweet chocolate chips into a double boiler and melt those little suckers. If you’re feeling fancy, you can always replace the semi-sweet chocolate with white chocolate or dark chocolate. Either would be fantastic. While the chocolate is melting, roast 2.5 cups of raw, non-salted almonds on a cookie sheet for 5 minutes at 350 degrees…be careful not to burn them. Roast until you can smell them! Once your chocolate of choice is completely melted and the almonds are all warm and toasty, take the chocolate off the double boiler and throw in the almonds and a whole bag of mini marshmallows into the chocolate. Mix around with a huge spoon until the marshmallows and almonds are completely covered with the chocolate. Do this step quickly so the marshmallows won’t completely melt and get everrrrrywhere. After this, scoop the mixture in heaping tablespoons on to parchment paper and let them harden. (If you’re impatient like me, pop the clusters into the fridge and speed up the hardening process…). And y’all, it’s that simple!
